Pinterest Recipe Adventures Potato Bake
Ever get stumped about what to make for dinner like me? I will continue to try out Pinterest recipes so that you can experience my triumphs and failures in the kitchen as I attempt to cook. Attempting to cook is really what I do, because I am admittedly a pretty bad cook. Armed with Pinterest I will continue to seek out the easiest, but delicious recipes and hope for the thumbs up from my picky kids. My hope is to inspire you with easy meal ideas that are personally tried and proven.
Pinterest Search Says
It was the middle of the week and the search was on once again for something new, and yet still delicious and easy for dinner. I happened to have some O’Brien style potatoes in the fridge. Pinterest comes to the rescue again. I searched “potato bake.” and got a large amount of pins. The resulting recipe was based on what I had on hand in my fridge and it was very easy and gluten-free! The following pins are what inspired my creation the most.
Ingredients
- One bag of prepared potatoes, O’Brien style
- 6 strips of turkey bacon (you can also use real bacon or bacon bits)
- Bag of frozen broccoli florets
- 1/4 cup of cheese
- Frozen cubed grilled chicken
- Dashes of Pepper, Salt, and paprika to taste
- Optional tsp minced garlic (mine came already chopped in a jar)
Directions
- Pre-heat oven to 400 degrees
- Pour the potatoes into a 9×11 inch baking pan
- Add the cubed frozen chicken, broccoli florets, and chopped turkey bacon and stir
- Sprinkle a dash of the salt, pepper, and paprika evenly to taste
- Add the cheese on top
- Bake covered with tinfoil for 20-25 minutes, until broccoli is cooked and cheese is melted

Now the final taste test. My kids and husband loved it! 👍They all gave it 2 thumbs up.👍 Of course, most of the broccoli was left behind on the kids’ plates. I insisted that they eat broccoli or lettuce. One child ate the broccoli, while the other chose to eat lettuce rather than eat the broccoli. I will have to continue to find new and clever ways to feed them vegetables. Smoothies have worked well in the past…I will keep you updated if I find any.
As for me, I loved my potato broccoli chicken bake creation as well. It was easy to make, gluten-free, and required minimal cooking expertise, which is perfect for me. I loved it so much that I even took the leftovers and placed an omelet on top for breakfast the next morning.
